2024 – The much-anticipated Montanera season has arrived at JAMONDOR, marking a special time when our Iberian pigs enjoy a diet enriched with acorns from the oak trees and long walks through the pastures, complemented by green grass.
During this period, Iberian pigs consume up to 10 kilograms of acorns daily, three times more than the amount of grass they eat. While acorns are a dry food high in oleic acid—a natural protector of the cardiovascular system—grass is essential for balancing their diet, refreshing their palate, and encouraging further acorn consumption. This diet not only enhances the flavor and quality of our Iberian ham but also contributes to heart health by reducing blood pressure and bad cholesterol while increasing good cholesterol.
The Montanera season is also crucial for maintaining the environmental balance of the dehesa, the unique ecosystem spanning 4.5 million hectares. This landscape, home to endangered species like the imperial eagle and the Iberian lynx, provides the perfect harmony between animal welfare, biodiversity, and the production of high-quality goods. Our Iberian pigs, capable of gaining 70 to 80 kilograms during this period, play a key role in this delicate ecosystem.
